When I looked at this aubergines sales display I immediately think of melanzane parmigiana (eggplant parmigiana). The aubergine is actually a fruit. It is also a member of the nightshade family alongside tomatoes and the humble potato. I use aubergine a lot in cooking. For example in ratatouille, moussaka and also as an antipasto (Italian starter) where slices of aubergine are grilled and served drizzled with our own olive oil. Photo art
