This composition is composed of a large part of the collection of pocket knives of Johannes van Dam.
Johannes van Dam (9/10/'46 - 18/9/'13) was a culinary journalist and owned a large collection of pocket knives. It is known that he liked to take his Laguiole pocket knife with him when he visited restaurants, as most of the knives provided there were of course inadequate. After his death this collection was transferred to the Foundation Gastronomic Library, Allard Pierson.
