Fly agaric mushrooms have different stages. They begin as a kind of egg, from which the mushroom grows. At first the fungus is still spherical, the red only just coming through the bursting white shell. The final white dots on the red are the remnants of the overall shell. Later, the cap extends and flattens, then fades to orange/yellow.
The Amanita muscaria or Fly agaric is so named because livestock farmers mixed the mushroom's poisonous white flakes with milk or water and placed that mixture in the barn to get rid of flies. This is how the fly agaric got its name.
