Abstract Photograph of fresh, uncooked, tagliatelle. This pasta got its brown colour by adding cocoa to the egg-meal mixture, while kneading the pasta dough. This not only turns the pasta brown but also gives it its typical cocoa flavour. This makes the dish extra special, especially if the sauce is also adapted accordingly: usually a creamy sauce is served with this pasta.
The dough is cut into tagliatelle-width in a pasta machine. This macro photo was taken from above to enhance the abstract image: the regularity of the pasta strips creates a horizontally oriented image.
