Marsh samphire (Salicornia europaea) is a plant that grows on salt marshes, on the edge of the sea. It is also known as hawkweed or saltmarsh samphire. Marsh samphire is a typical seasonal vegetable. Marsh samphire is easy to recognise by its typical tubular thickened stems. The taste of marsh samphire is particularly salty, like the sea. It has also been described as having the taste of fresh spinach, or similar to green asparagus. Sometimes it is even said to resemble radishes in texture.
