Smoking Fish.
Have been watching this process of smoking fish. I believe this result shown on the photo is called hot-smoked fish. It makes such delicious tasting fish mainly because it hangs over a smoldering fire. The smoke gives the fish a lovely aroma but also preserves it for a longer time. The tub gurnard is a reddish fish with blue pectoral fins. It is a coastal species, prevalent in the Mediterranean Sea (especially the western Mediterranean and the northern Aegean) and the Atlantic Ocean from Norway to Cape Blanc. It is also present, though less common, in the Black Sea, the southern Baltic and the eastern Mediterranean.
