In the early evening, the fishing boats are moored at the pier of Port de la Houle and peace has returned to the oyster fishermen's harbour. In the Breton harbour town at the eastern end of the Emerald Coast, ostréiculture was invented, the elaborate cultivation of oysters with the changing tides.
Even in the Middle Ages, oysters were the daily bread of the people of Cancales. In 1545, Francis I granted them town privileges out of enthusiasm for the seafood.
A ship filled with seawater served as a cold store for all oysters that could not be eaten or shipped immediately. From the 18th century onwards, the oysters were preserved in vinegar and sent to the court in Versailles several times a week.
