Still life with flowers, fruit, a great tit and a mouse, Herman Henstenburgh, ca. 1700 - ca. 1710 Herman Henstenburg was a pastry chef by profession, similar to a caterer today. He made his artful watercolours with flowers, fruit and insects out of enthusiasm. Henstenburg developed a special kind of watercolour that, according to a contemporary, was so bright and strong that it was hardly inferior to oil paint. Even during his lifetime, his capital still lifes became known to collectors far beyond his hometown of Hoorn.
